Have you ever had a Pignoli Cookie? Some people call them Pine Nut Cookies because they are baked with pine nuts on top. The name is not as important as how they should taste. Often cold when you purchase since they are not made with flour, they are made with almond paste. It is possible they could stick together if left at room temperature. This is okay, since a room temperature Pignoli Cookie tastes as delicious or is the equivalent to a warm chocolate chip cookie. If you think about it, a cookie that sticks to another cookie is considered one big cookie... it's really a win-win situation.
